If you are unable to provide this, please explain in more details (use extra comments section below) why you can't provide manufacturing costs and state your average profit margin, so insurance company can calculate approximate cost.

If you purchased the goods and the weight was included in the cost invoice please attacht this invoice here, otherwise please ask your supplier for a product specification sheet. You can also submit a photograph showing the product on the scales with visible weight reading. If you are unable to provide anything, please explain in more details (use extra comments section below) as to why you can't provide proof of weight.
